Schezwan chilli chicken

Ingredients :

10-12 chicken  pieces (with bones)
2 -3 chopped spring oinions
2 handful of dry red chillies  (chopped and deseeded )
1" (cuts) 2-3:tsp chopped ginger
3 tbsp  green pepper corns
1tsp ajinomotto
3tbsp brown pepper corns
Salt to taste
2tsp white pepper powder
Oil for frying
1tsp black vinegar
2tsp chillies oil
2-3 tsp chopped garlic
Method :

First fry the chicken  with  ginger till the colour changes to golden, now drain the oil and keep the chicken aside.
In the oil add garlic, spring onions, green pepper corns, and brown pepper corns mix and fry for 5 minutes and then add the dry red chillies add chicken, white pepper powder, ajinomotto, salt and chill oil , stir fry again for 5 to 10 minutes add black vinegar  stir fry for 10 mins.

Serve garnished with green pepper corns. 

GARLIC PICKLE

INGREDIENTS

10 Large pods of garlic
20 lemons
100 grams of chilli powder
2 tsp of roasted ground fenugreek seeds
1 cup of oil
2 tsp salt

METHOD

Separate the garlic pods, peel, wash and dry with a cloth.
Squeeze out the juice from the lemons and pour into a large airtight jar, and add garlic and salt.
Cover tightly and aside for 5 days.
On the 5th day add the chilli powder, fenugreek powder and oil. Mix well, seal the cover tightly and open the jar for use only after 5days.

Paneer Nuggets

Paneer Nuggets


Ingredients :

Cottage cheese (grated) 200 gm
Chopped coriander leaves 1 tbsp
Chaat masala 1/4 tsp
Red chilli powder 1/2 tsp
Lemon juice 1 tbsp
Sugar 1/2 tsp
Flour 4 tbsp
Black pepper powder to taste
Bread crumbs 1/2 cup
Turmeric powder 1/2 tsp
Cumin powder 1/4 tsp
Oil for deep frying + ¼ cup

Method:

Put grated cottage cheese,coriander powder,  turmeric powder, cumin powder,salt, chaat masala, red chilli powder, lemon juice, sugar and coriander leaves into a bowl and mix well.

Mix flour, salt and black pepper powder in another bowl, add sufficient water and mix well to make a smooth thick batter. Spread the breadcrumbs on a plate, add salt and black pepper powder and mix well. Heat sufficient oil in a wok.

Divide the cottage cheese mixture into small equal portions and shape them into nuggets. Dip them in the batter, roll in spiced breadcrumbs and deep fry in hot oil till golden brown. Drain on absorbent paper. Serve hot.

Spicy brain masala

 A delicious, simple  lamb brain curry  very easy to prepare.

Ingredients :
·         Lamb brain   4
·         Salt to taste
·         Onion    4, finely sliced
·         Ginger       1 inch
·         Coriander   ½ tbsp, powder
·         Curd      ½ tbsp
·         Ginger-garlic paste  1 tsp
·         Lemon  2
·         Green coriander 1 bunch, finely chopped
·         Mint leaves   1 cup
·         Green chillies  4, finely chopped
·         Garam Masala  1 tsp
·         Oil  1 cup

METHOD:

·         Wash and Boil brain carefully
·         Clean all nerves and cut in to small pieces
·         Pour oil in a pan and heat it
·         Add onion in oil and fry till it turns to Golden brown
·         Now remove half onion in a bowl
·         Add ginger, coriander powder, curd, ginger garlic paste, green chilli, gram masala and lemon to the remaining onion and sauté
·         Then add brain pieces and sauté
·         When oil gets separated, add remaining onion, green coriander and mint leaves

Spicy lamb brain curry is teady to eat with roti or any kind of bread.

Tip : while boiling lamb brain add 3-4  garlic cloves with skin and 3-5 pepper corns, with this it would not get any kind of smell .

Pepper chicken

Pepper chicken :

Making pepper chicken  in a very easy way, and it tastes yummy. 

Ingredients :


3 onions chopped
Green chillies  5 slit
Ginger paste 1tsp
Garlic paste 1tsp
Curry leaves
Pepper powder according to taste
Salt
Soya sauce 1 to 2 tbsp

Method:


In oil fry onion  and green chilies fry till onions are transperent then add ginger garlic  paste fry and then add chicken pieces fry and put curry leaves cook till cooked then add pepper powder and soya sauce.

Tasty Jingha Recipe prawns

Tasty jingha is made with ajwain and other spice which is really very tasty.

Ingredients :

1) Tiger prawns - 15
2) Lemon - 3
3) Ginger-garlic paste - 25gms
4) Salt - 1 tsp

Golgappas

A very good tasty golgappas can be made at home.

INGREDIENTS FOR PURI:

Rava -1/2kg
Cooking soda-a pinch
Wheat flour-250gms
