Schezwan chilli chicken

Ingredients :

10-12 chicken  pieces (with bones)
2 -3 chopped spring oinions
2 handful of dry red chillies  (chopped and deseeded )
1" (cuts) 2-3:tsp chopped ginger
3 tbsp  green pepper corns
1tsp ajinomotto
3tbsp brown pepper corns
Salt to taste
2tsp white pepper powder
Oil for frying
1tsp black vinegar
2tsp chillies oil
2-3 tsp chopped garlic
Method :

First fry the chicken  with  ginger till the colour changes to golden, now drain the oil and keep the chicken aside.
In the oil add garlic, spring onions, green pepper corns, and brown pepper corns mix and fry for 5 minutes and then add the dry red chillies add chicken, white pepper powder, ajinomotto, salt and chill oil , stir fry again for 5 to 10 minutes add black vinegar  stir fry for 10 mins.

Serve garnished with green pepper corns. 

GARLIC PICKLE

INGREDIENTS

10 Large pods of garlic
20 lemons
100 grams of chilli powder
2 tsp of roasted ground fenugreek seeds
1 cup of oil
2 tsp salt

METHOD

Separate the garlic pods, peel, wash and dry with a cloth.
Squeeze out the juice from the lemons and pour into a large airtight jar, and add garlic and salt.
Cover tightly and aside for 5 days.
On the 5th day add the chilli powder, fenugreek powder and oil. Mix well, seal the cover tightly and open the jar for use only after 5days.
