Coconut custard

Coconut custard is a sweet dish made from coconut milk. It's a very tasty recipe. The main ingredient is coconut.


Ingredients
2 Cups - dried grated coconut
2 Cups - milk
4 Eggs

Method
Boil milk with coconut and keep it covered till cold. Take out the milk from coconut and strain it and discard the coconut pulp. Beat eggs and sugar over the pan of hot water, till frothy, then mix coconut milk gradually till well mixed. Put it in 8 individual buttered custard cups and cover it with wax paper. Bake it over the pan of water till custard is set. Mix 1 drop of red colour in 1/4 cup coconut. Sprinkle pink coloured coconut on each cup. Serve it cold.

Mulligatawny Soup

Ingredients

  • 1tblp ground coriader
  • 1 tblp turmeric
  • 1 tblp poppy seeds
  • 2 cloves garlic chopped
  • 4 onions, chopped
  • 2 cups water or stock
  • 1 tblp oil
  • 1 cup coconut milk
  • 1 tsp salt
  • 1 tsp lemon juice








MethodCombine coriander, cumin, turmeric poppy seeds, salts garlic, and half of the chopped onions and the stock in a pan and .  simmer on fire for 25 minutes and strain. Mean while saute other half of the onions in the oil until brown. Add to strained stock along with coconut milk and lemon juice. Simmer for 4 to 5 minutes.



Oats Soup

Preparation time :3 minutes
Serves : 1 person

Ingredients :
4 spoons of oats
2 1/2 spoons of mixed vegetable soup powder
300 ml of water
Salt and pepper to taste

Method :
Heat about water on low flame for a minute, add soup powder, mix thoroughly and add 4 spoons of oats, cook for two minutes and finally add salt and pepper to taste.
